I. Food Biotechnology Laboratory
This Laboratory was first established in 1993 by Prof. Steven Feng Chen when he joined the University of Hong Kong as an Assistant Professor. The Laboratory is mainly supported by University Research Grants and External Research Grants. Major grants awarded include 10 RGC (GRF) grants, 2 ITF grants and 1 EPD grant, totaling more than 12 million HK dollars. Additional funding (more than 3 million HK dollars) from CRCG grants, URC grants, teaching grants and equipment grants has been received. The Laboratory is very well equipped with modern facilities, such as 10 fermentors (Bioengineering, Switzerland) ranging from 2.4-L to 30-L, 3 HPLC systems (Beckman and Waters), 1 GC system (HP), 1 GC-MS system (HP), 1 counter-current chromatographic system, 1 PCR machine, 1 gene pulser (BIO-RAD), 1 gel doc and many others. There are also shared large equipment items in the Central Laboratories of School of Biological Sciences.
The laboratory is led by Prof. Steven Feng Chen. Prof. Chen is a member of the Editorial Board of the following international journals: Process Biochemistry (Elsevier), Biotechnology Letters (Springer), Journal of Applied Phycology (Springer) and Open Food Science Journal (Bentham). Prof. Chen is also a Director of Chinese Institute of Food Science and Technology, Founding Council Member of Asia-Pacific Society for Applied Phycology, Founding President of Hong Kong Proteomics Society, Guest (or Consultant) Professor of several universities in mainland China. Professor Chen is a Recipient of the prestigious Outstanding Young Researcher Award of The University of Hong Kong (2002-2003), Outstanding Research Student Supervisor Award of the University of Hong Kong (2005-2006), Outstanding Researcher in Food Science and Technology Award (2004), CIFST Science and Technology Innovation Award (2008), and Elected Fellow of American Institute for Medical and Biological Engineering (AIMBE). In his capacity as Chairman, Prof. Chen has organized several international conferences including the Fourth Asia-Pacific Conference on Algal Biotechnology.
Main Research Interests:
- High-yield production of astaxanthin, lutein, phycocyanin, long-chain polyunsaturated fatty acids, and bioactive proteins by microalgae and cyanobacteria in heterotrophic and mixotrophic cultures.
- Mechanism of formation of secondary metabolites in microalgae in heterotrophic culture.
- Metabolic engineering of carotenoid biosynthesis and glucose transportation in green microalgae and cyanobacteria.
Biodiesels from microalgae – process optimization and genetic manipulation.
- Fermentation technology including bioreactor designs, high cell density techniques, mechanisms of substrate inhibition, downstream processing of fermentation products, and modelling of fermentation processes, etc.
- Characterization of anti-cancer activities of bioactive compounds from Chinese herbs or algae by proteomics.
- Separation and purification of lipids and secondary metabolites from microalgae and Chinese medicinal plants by High-Speed Counter Current Chromatography (HSCCC).
- Inhibitory effects and mechanisms of dietary polyphenolic compounds on the formation of toxic substances from Mailard reaction.
- Natural products as reactive carbonyl scavengers to prevent formation of advanced glycation endproducts.
- Identification and determination of various drugs and food and fermentation compounds by molecular imprinting, GC, HPLC, LC-MS and related techniques.
- Chinese medicine for the treatment of SARS, diabetes, heart diseases, and cancers as well as their complications.
