Course objectives

Many in Hong Kong suffer from overweight problems. Some (especially girls) have gone the opposite direction by starving themselves to look as thin as they can to match their vastly underweight idols (fashion models or songstress). Both situations stem from the lack of general scientific knowledge on how to maintain a normal healthy body.

The course is designed for non-science majors. An overview will be provided on food science and nutrition. The course examines the health effects arising from obesity (overweight) and anorexia (underweight) and discusses ways to prevent such problems. The style of teaching will be interactive.

The following topics will be discussed:

Style of teaching:

An innovative and interactive style of teaching will be adopted. This course will be taught by professor Lie Ken Jie and Dr. Edmund Li.

Assessment:

Attendance (Quizzes) 15%
Class tests 30%
Assignment 15%
Poster 25%
Critique 15%

There is no formal examination at the end of the course.

  2. Composition of food – starch, protein, fat
  3. Digestion and metabolism
  4. Cholesterol  (膽固醇)
  5. Body weight control – get slim, get fat!
  6. A healthful diet
  7. Anorexia and bulimia (厭食症)
